Had to wait 45 mins, but there are some bars in the area to keep you busy. Crab bun was amazing. SO much flavor. Scarfed it down within a minute. My friend usually gets the pork, but he loved this. All the meat-ramen options have pork-based broth, which unfortunately I can't have, so I had to order the Thai curry ramen, and added some duck. That was also great, but I think they charged me an extra $8 for the duck, which is kinda ridiculous. Mocktail was delicious. Paid $44 for my 3 items. The appetizer cook was right in front of us, so we got to converse with her a bit, and she was chill. Ambience was bright, and authentically tightly packed haha, so you know the food's going to be good. 4.5 stars

One of the best noodle bars in Denver - I've been getting the khao soi and my sister always orders the spicy chicken ramen - both are unbelievable. We ordered eggplant buns and fried chicken because it was happy hour :) perfect spot for winter ramen!

Classic! I feel like the line at Uncle has gotten shorter as the years go on, since they still don't take reservations. I've walked in for dinner on random weeknights, and I've been able to get a table or sit at the bar right away. As always in this neighborhood, come early if you're meeting others to carve out time for street parking. Usually I get the Veggie Khao Soi with side of fried tofu, but most recently this summer, I wanted to try something cold - the Hiyashi Mazemen. Sooo good and refreshing! They have a special where my partner and I could get ramen and a bottle of sake at a discounted rate. Service is great, and I love observing the chefs work their magic.

Chashu Ramen: 4/5 the broth was good but not worth the wait, the chashu was tender, wish they had a creamy broth option. Fried quail: 4/5 difficult to eat but the vietnamese flavors from the fish sauce was addictive Pork buns: 5/5 tender pork belly with well balanced ingredients

This spot is popular, so get there early during the week, or be prepared to wait, as they don't take reservations. The atmosphere is casual and hip, with attentive and effective staff. The food my husband and I tried was delicious. The Chinese Eggplant Buns (two per order) were amazing: steamed buns stuffed with Fried Chinese eggplant, miso mayo, pickled plum mustard seed dressing, and cabbage slaw. The Spicy Chicken Ramen with a meat based spicy sesame broth, seared confit chicken, bean sprouts, and soft poached egg was also very tasty. The prices are higher than average, with a bowl of ramen priced at $19, and I found it a little surprising (and disappointing) to be charged extra for a small side of sauce that was suggested by our waitress. Still, Uncle is definitely worth a visit to experience their unique take on the traditional Japanese staple!

It was our anniversary trip/ dinner and with the chilly weather and flu-ish feeling we were up for some ramen! The reviews did say they have a wait, 2-3 hours or a line that sometimes runs around the block, so we went to the less popular newer location instead. We did have to wait about 15-20 mins though (not too bad). When asked if we were celebrating anything, we did say our anniversary. They did sent us out a cold tofu appetiser that was delicious that we somehow would not have ordered ourselves reading the description. The place was busy, the staff was so efficient, the bao was smaller than what I've had at other restaurants, so we got the pork belly one as well as the soft shell crab one that I devoured alone( the hubs is allergic, more for me.. yay!) my husband got the chili pork ramen, that was soo spicy and felt amazing for our stuffed sinuses (I said ours coz I stole some of his). We also got the chilli bomb on the side. Which I used to spice up my chashu pork ramen. We obviously could not finish our ramens, had to pack almost half of it to go. Breakfast noods for the win!
